Global Field Program alum Staci Grady shares “Lessons of Cassava,” an article about her Earth Expeditions to Guyana. In Guyana cassava is a major staple food but contains cyanide and requires intense processing. “How curious a thing to have something toxic and laborious be crucial to people’s diets,” said Grady. “How compelling to have so little contact with something that became the root of contemplation for my own community…,” where according to Grady, over 14 percent of people suffer from food insecurity.
